Cayuga County Restaurant Inspections: February 4, 2022 | Folders

• Parker’s Grille & Tap House, 129 Genesee St., Auburn: Unsatisfactory (January 20). A solid roast of cooked beef weighing approximately 20 pounds was observed in a covered bin in the basement cold room. The temperature of the roast was measured at 167 degrees Fahrenheit. The manager said the cooked roast beef was placed in the cooler 15 minutes prior to inspection. Correction: Before returning to the cooler, the cooked roast beef was cut in half and placed in the bin with the lid partially uncovered to allow adequate cooling. The temperature was taken again 10 minutes later at 152 degrees. Three crates of tomato soup located on the dry storage floor in the basement. Missing thermometer in the vertical cooler in the basement. The cutting board on the sandwich maker is nicked and stained. The table can opener blade on the prep table in the basement is dirty. Loose hinges on the chest freezer located at the kitchen door. Exterior sides of cooktop and fryers located in kitchen are dirty. The handles of the upright cooler located near the washing up station in the galley have a dirty residue. The interior of the Avantco prep unit in the kitchen observed a buildup of water condensation on the bottom shelf. The disinfectant solution is not properly prepared during the inspection. Wiping cloths not stored in disinfectant solution between uses. The designated employee hand washing sink in the kitchen is wobbly and is not a secure base to support the sink. Rodent infestation appears to be present. The walls on the side and back of the cooking line equipment are dirty with food spills. The ceiling at the kitchen entrance has a slow leak. The floors in the corner and under the cooking line are littered with food debris. The top vents of the cook line have a buildup of greasy residue.

• Lasca’s, 252 Grant Ave., Auburn: satisfactory. Several five-gallon buckets of sauce and cans of food items are observed stored on the floor in the cold room. The door seals and interior trim of the four drawer double door cooling unit are torn and no longer smooth and easy to clean. The main kitchen walk-in freezer floor is cracked, torn and chipped. The exhalation hood filters above the sauté/sauce line need to be cleaned due to grease buildup.

• York Street Diner, 6 York St., Auburn: satisfactory. Lack of accurate thermometers in each cooling unit.

• Pizza Hut, 386 Grant Ave. Road, Auburn: satisfactory. Mildew buildup observed along the entire length of the baffle in the ice well of the ice machine. The facility lacks accurate thermometers which are not available in every cooling unit. Mildew buildup observed on the walls of the pizza cooler. The floors under the pizza cooler and cold room shelves were found to be covered in a layer of grease and food debris. The main pizza maker door handles are coated with grease and food debris. Accumulation of grease and food debris observed under equipment throughout the facility. Significant mold buildup under and around the dishwasher. The exhaust filters located above the observed pizza oven are covered with a layer of grease and dust.

• The Busted Yolk, 11384 North St., Cato: satisfactory. Cold room shelves are missing sealant. The floor under the cooking line must be cleaned to prevent the accumulation of food debris.

• Giuseppe’s Pizzeria, 75 Owasco St., Auburn: Unsatisfactory (January 27). Several unlabeled spray bottles of cleaning solutions were observed throughout the facility. Bottles labeled by the operator at the time of inspection. Seven slices of Buffalo Chicken Pizza and two slices of Chicken Bacon and Ranch Pizza were placed in the warming display case. Temperatures ranged from 99 degrees to 132 degrees. Time is used as a critical control point for this facility, but no elimination time was recorded. The pizzas were discarded upon inspection. About 50 regular pizza boxes and 25 pre-assembled sheet pizza boxes were stored in the dining room, accessible to the general public.
