Restaurant inspections for Catoosa and Walker counties June 1-15, 2021 | Catoosa Walker News

From June 1 to 15, 2021, the health department carried out inspections in 21 food services in Catoosa and Walker counties: seven got a perfect score of 100, 12 got a score in the 90s (A) and two obtained a score in the 80s. (B).

CATOOSA COUNTY

JACK’S FAMILY RESTAURANTS

56 LAKESHORE DRIVE FORT OGLETHORPE

Inspection date: 06-02-2021

Observed spray bottle of soap stored on food prep table between uses. CA: PIC moved the spray bottle to the chemical storage area. (4 points)

Observed that the ice cream scoop was not working well. Employees fill the well with hot water and replace it regularly to ensure the water stays at 135 degrees Fahrenheit or higher, but this becomes difficult to do during peak periods. CA: The outrigger well needs to be repaired. (1 point)

Grease buildup observed on the heat lamp area where fries are kept and on the side of equipment in that area of ​​the kitchen. CA: PIC had employees who cleaned the equipment. (1 point)

2051 BATTLEFIELD PKWY FORT OGLETHORPE

Inspection date: 06-02-2021

Inspector’s Notes: TCS foods observed kept cold above 41 degrees in the upper prep cooler (see temperature table below). CA: PIC took the TCS and placed it in an ice bath to cool it. PIC will monitor the preparation of the egg top / cooler before continuing to use it to keep TCS foods cold. Informal follow-up will be done to verify that the chiller is functioning properly. This is a repeated violation in the past 12 months and requires a risk control plan. The RCP will be discussed with the PIC. (9 points)

Inspector’s Notes: Observed that no hand washing soap is available at any of the hand washing sinks. CA: PIC filled with hand soap dispenser. (4 points)

1086 PKWY FORT OGLETHORPE BATTLEFIELD

Inspection date: 06-03-2021

Accumulation of grease and food debris observed on much of the facility equipment. A significant build-up of food debris has been observed in refrigerators and freezers and in the seals of the refrigeration units. CA: PIC will ask its employees to do a thorough cleaning of the equipment. This is a repeated violation and will require a written remediation plan. (1 point)

Grease buildup observed on walls behind fryer and grill and standing water behind freezer. CA: PIC will have clean employees. This is a repeat inspection and will require a written remediation plan. (1 point)

2598 RD LAFAYETTE FORT OGLETHORPE

Inspection date: 06-07-2021

Observed no paper towels available at two of the sinks for hand washing. CA: PIC put paper towels in paper towel dispensers. (4 points)

The observed handwashing soap was not dispensed into one of the handwashing sinks. CA: PIC replaced the battery in the hand soap dispenser. (4 points)

Observed the accumulation of food debris on several pieces of equipment at the facility. Food debris observed inside coolers and grease and food buildup on sides of cooking equipment. Accumulation of food debris observed in microwaves and outside of microwaves. CA: PIC will clean the equipment. Will require a remediation plan. (1 point)

Food debris observed on floors stuck in the grout. The grout gets so low between the tiles that food and water get trapped between the tiles. CA: Recommend replacing the grout in the areas where it has gotten so low between the tiles. (1 point)

Inspection date: 06-08-2021

Observed hydrogen peroxide and bucket of disinfectant solution stored on the surface of the prep table. CA: Chemicals should be stored away from food and food preparation areas in a designated area. (4 points)

Personal objects of the observed employees, food and drugs stored on the preparation surface and scattered on shelves and not labeled. CA: Employees are to keep all of their personal effects in a designated area away from food preparation and storage. (1 point)

Inspector’s Notes: Dumpster lid observed open when not in use. CA: PIC asked a food employee to close the dumpster door. (1 point)

Inspection date: 06-14-2021

Inspector’s Notes: TCS foods observed in the upper prep cooler above 41 degrees Fahrenheit. The internal hanging thermometer showed the air temperature to be over 45 degrees Fahrenheit. The internal temperature of the food ranged from 47 to 51 degrees Fahrenheit. CA: PIC said they had it fixed recently and needed freon, but they will keep the food frozen until it can be fixed or replaced permanently. (9 points)

Inspector’s Notes: Observation of a food service employee wearing a wristwatch while preparing food. CA: PIC asked an employee to remove his wristwatch and wash his hands. (3 points)

Observation of a food service employee preparing food while wearing a CA wristwatch: PIC instructed an employee to remove the wristwatch and wash their hands. (3 points)

Leak observed in the ceiling directly above the preparation line on the service line / table. PIC said it was treated but not fixed. They do not actively use this part of the serving line, but have asked them to put a pot on the line to catch the dripping water and keep it from splashing onto food being prepared and kept in the oven. cold on the line. CA: The leak in the ceiling should be repaired as soon as possible. Informal follow-up will be done within 10 days to verify that the leak has been repaired. (1 point)

Inspection date: 06-08-2021

Choking posters observed not displayed in the dining room. The PIC had posted posters in prominent places. (1 point)

Kitchen equipment observed (deep fryers, range hood vent, coolers, heat lamps, etc.) with accumulation. The ICP increased the frequency of the cleaning program. (1 point)

Accumulation of debris observed on the bed of the bed. Has the PIC removed debris and pressure wash buffer. (1 point)

Floors of the facilities observed with a significant accumulation of debris. PIC cleaned floors / walls more frequently by implementing a cleaning program. (1 point)

Inspection date: 06-14-2021

No ICP was observed at the time of the routine inspection. CA: CFSM will designate the PIC with practical food safety knowledge at all times when CFSM is not present. (4 points)

Observed disinfectant concentration too high for CA manufacturer’s recommendation: PIC cut the disinfectant concentration with water to produce an appropriate disinfectant concentration. (4 points)

Observed TCS foods stored for 24 hours without dating. CA: PIC threw out the TCS food. (4 points)

Accumulation observed on the walls and ceilings of the main kitchen. CA: PIC will clean all buildup and debris from walls and ceilings. (1 point)

Several flies observed throughout the establishment. CA: PIC will follow up with the pest control service to effectively control the pests. (3 points)
